Serves: 5 pax

Ingredients A

  • 5 pcs chicken drumsticks

Ingredients B

  • 6 cloves garlic
  • 1 medium onion, cut into cubes
  • 8 pcs shallots
  • 1 pc ginger, thumb-size
  • 3 stalks lemongrass, cut into small pcs
  • 1 tsp Chili Powder
  • 1 tsp fennel seeds powder (Serbuk Jintan Manis)
  • 1 tsp cumin seeds powder (Serbuk Jintan Putih)
  • 1 tbsp coriander powder (Serbuk Ketumbar)
  • 2 tbsp meat curry powder
  • 50ml water

Method:

  1. In a food processor, blend ingredients B until a smooth paste is formed.
  2. Marinate the chicken drumsticks with the prepared paste for a minimum of 3 hours, or for best results, marinate overnight in a refrigerator.
  3. Brush some oil onto the air fryer basket. Arrange the marinated chicken drumsticks in the basket in a single layer. Depending on the size of your air fryer, you may need to fry in two batches.
  4. Air-fry the chicken at 160°C for 15 minutes, then increase the temperature to 200°C for an additional 5 minutes.
(Note: If using an oven, preheat to 230°C, bake the chicken drumsticks for 20 minutes, flip them over, and bake for an additional 15 minutes or until golden brown.)
  5. Your delicious chicken drumsticks are now ready to be served!
